Causeway Cocktail

Recipe provided by: Right Some Good Food Festival


1 oz fresh lemon juice
1 oz honey syrup
1.5 oz Smuggler's Cove rum
2 tsp Galloping Cows ginger-peach juice
2 sprigs of fresh mint (and 1 for garnish)
  Top with ginger beer



Honey syrup

  1. Add 1 part honey, 1 part brown sugar and 2 parts water to a pot, bring to a boil, let cool, bottle. Does not need to be strained.

Causeway Cocktail

  1. Combine ingredients in a shaker with ice, shake hard and double strain into highball glass filled with ice. Top with ginger beer, garnish with a sprig of mint
